We used caramelized onions, green bell peppers, and mushrooms to create a topping that is vegan bacon jam that delicious on burgers, chicken, pork chops, or black bean burger. It may be vegan, but it will satisfy meat eaters as well!
1 pint white mushrooms (or mushroom of your choice) but choose a mushroom that doesn't have a very strong flavor to avoid contrasting flavors, cut in strips
1 green bell pepper (or colored bell pepper of your choice) cut in strips
1 medium sweet onion cut into slices
1 c. Cherry Balsamic Vinegar (sunoliveoil.com)
drizzle of olive oil
salt & pepper to taste
Begin by sautéing the onions, peppers, and mushrooms until soft. Add balsamic vinegar and allow to reduce by half. The sauce should begin to thicken at this point and become a consistency that is spreadable. Season with salt and pepper to taste.
